Hi pretties! Okay so I haven’t posted any of the pictures of what I was eating over winter break. It was SO great to be home and be able to cook in my nice pretty kitchen. I absolutely love to cook and experiment so it is so hard for me to be in the dorms where the only thing I have a say in is the salad. Anyways, enjoy!
Okay so first here I have homemade turkey burgers (which I no longer eat!). These were absolutely delicious. All they had was lean turkey breast ground up, parsley, garlic, and salt and pepper! On the side is a little salad.
I visited my friends at University of Michigan, and here was what I had for dinner! It was a little shrimp curry, basmati rice, and broccoli with Sriracha.
My mother and I made barbecued shrimp with rice and steamed spinach for dinner one night. SO GOOD!
One of my favorite things to eat is protein salad from Plum Market, a local grocery store in Michigan. Because it is so expensive to buy premade, my mom and I decided to make some of our own. We put edamame, kidney beans, red lentils, brown rice, and corn, and dressed it fattoush salad dressing. I added peppers and parsley on top to spice it up a bit! This is such a yummy vegan meal. Honestly one of my favorite things—so filling, so easy, and super convenient to make in bulk.
